I used to be a really “safe” consumer. I would not taste something I didn’t like the looks of, and grew up in a family where we only ate chicken. I had this weird aversion towards pepperoni for years(because I liked pigs), and when I eventually got over the aversion (still like pigs though), I tried breakfast sausage and loved it. The first time I ate shrimp was about 4 years ago…AND I despised it. I disliked the squishy texture, and how it sort of “burst” in my mouth – the whole thing grossed me out as if I was eating a large white wood grub. Blech! UNTIL, I tried the following recipe for grilled shrimp skewers. My sister-n-law introduced me to this at a recent dinner party and surprisingly, I went back for seconds!
Ingredients:
-Medium Shrimp: Raw, Peeled, & Deveined
-Pepper & Salt
-PAM spray
-2 tbsp mayonnaise
-2 tbsp chopped chives (chop really small)
-2 tbsp Thai Sweet Chili Sauce
-2 to 3 tbsp. Sriracha (somewhat spicy…so make sure and taste as you add more)

Heat Grill to medium heat. Spray with Pam. Lay skewers on grill. Shrimp to cook 3 minutes on each side, or until “opaque”. Brush more sauce on each side of shrimp when turning. ENJOY!
A few things I love about this recipe: 1. Kitchen does not smell like seafood afterwards, since you’re grilling. 2. Cleanup minimal 3. Fast AND Easy to make for a party 4. Low Calories!
