Apricot Thyme Glazed Pork Chops

I have never been a big fan of pork, but this recipe is unbelievably easy, delicious, and the end result looks a lot more complicated than it is. I have made apricot glazed pork chops before but this time I decided to add in some thyme for a more complex flavor. Here is all it takes:

Pork chops

Salt & Pepper

Thyme

Apricot preserves

Season pork chops with a quick sprinkle of salt and pepper and pinch of thyme. Spread apricot preserves over top. Bake at 375 for 10-20 min. depending on the thickness of the meat. That’s it!

(I served them topped with a garnish of spinach sautéed with garlic and soy sauce.)
