Cookies made with avocado? Sounds crazy I know, but I heard you can replace some of the butter in cookie recipes with avocado for healthier fats without losing the texture. This was my first experiment with doing so, and at first when it turned my batter pale green, not going to lie I was worried. But you can not taste the difference and the cookies turned out soft and chewy. Also by the time I added all of the other ingredients, the green hue was diminished to unnoticeable. I topped these off with a lavender icing, naturally colored with a bit of blueberry jam, making it pastel purple for Easter this weekend. Here is the recipe:
3/4 C softened butter
1/4 C mashed avocado
1 3/4 C white sugar
2 eggs
2 tsp vanilla extract
2 3/4 C flour
1 tsp baking soda
1/2 tsp salt
Bake at 350 for 8-10 minutes.
Icing:
1 cup powdered sugar
3-4 tsp milk
1 tsp melted butter
1/4 tsp vanilla extract
¼ tsp blueberry jam
pinch of lavender
