Gather 4 large onions, 4 tablespoons of butter, 2 tablespoons of flour, 8 cups of beef broth, 1/4 cup of white wine, salt, pepper, thyme, bay leaf, French bread and grated cheese

Peel and slice the onions thinly

Melt the butter in a large skillet over medium-high heat and cook the onions until soft and caramelized, stirring occasionally, for about 30 minutes

Sprinkle the flour over the onions and stir to coat

Transfer the onion mixture to a crockpot and add the beef broth, wine, salt, pepper, thyme and bay leaf

Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours

To serve, ladle the soup into oven-safe bowls and top with a slice of bread and cheese

Broil in the oven until the cheese is melted and bubbly
