This festive salad can either be a main course or side dish, and using red quinoa, green olives, red peppers, with a cilantro-lime dressing, this is a nutritious way to add a little color to your table this holiday season. It can be served hot, immediately after cooking, or as I prefer, chilled.
Ingredients:
1 C Red Quinoa
2 C Water
1/2 C Green Olives
1/2 C Red Pepper
1/2 C Chopped Tomato
1/4 C Chopped Cilantro
1/4 C Olive Oil
2 Limes juiced (about 4 Tbl juice)
1/2 C Black Beans
1/2 C Corn
2 Tsp Ground Cumin
1 Tsp Salt
1 Tsp Red Pepper Flakes-or more if desired
Crumbled Feta Cheese (for topping)
Rinse quinoa, and bring water to a boil. Add quinoa and reduce heat to low, cover and simmer until water is absorbed, about 10-15 min. Mix lime juice, olive oil, cilantro, cumin, red pepper flakes and salt in a bowl. Pour this sauce into your quinoa, add veggies, and top with feta cheese.
Sounds delicious – I prefer my quinoa chilled as well. 🙂
